「食と健康」をキーワードに、海産物由来硫酸化多糖の体内動態解析や健康効果の作用機序の解明や、動脈硬化の原因と言われる食後高脂血症におけるリポタンパク質分画の解析と高脂血症と生活習慣病との関連の解明に関する研究を行っています。

▌教育と研究

研究内容

 海産物に多く含まれている硫酸化多糖の健康効果の機序を解明する目的で、モズク由来の硫酸化多糖であるフコイダンの体内動態や消化管内での代謝産物の解析を行っている。また、動脈硬化の原因とされる食後高脂血症の本体を明らかにするためにリポタンパク質分画を解析し、特定のリポタンパク質画分が生活習慣病の発症機序に関わるという私たちの仮説のもとで生活習慣病予防に資する検査法の開発や生活習慣病を防ぐために有効な食習慣の解明や食品の指標の開発を行っている。
 また、地域の病院と共同して健診データをもとに生活習慣病の予防に関する研究にも参画し、健診に適した簡易診断法の開発にも取り組んでいる。
